Irish Soda Bread

Amy Halloran, Flour Ambassador, uses maple syrup as the sweetener for this soda bread.


3 cups flour (soft white wheat)

1 tsp soda

2 tsp baking powder

1 tsp salt

4 TBSP butter softened

1/3 cup yogurt

2 TBSP maple syrup

2 eggs

1/2 cup milk

Mix dry ingredients, and incorporate softened butter with your fingers. Add liquids all at once. Knead lightly, very lightly, and shape into 2 rounds. Cut with many crosses to facilitate even baking, and bake in a preheated 400-degree oven for about 40 minutes. Coat with 1 to 2 TBSP butter to soften the crust. Drizzle with maple syrup to taste.
