Succulent Squash Squash come in many varieties, and some store well for months. Cindy Barber of Barber's Farm in Schoharie County shows how to get the most out of winter squash. In the kitchen, Kim prepares delicious dishes featuring squash: delicata squash with rosemary, sage and cider glaze, penne with zucchini, summer squash and ricotta, butternut squash with black beans and a no-cook pumpkin mousse.
